Could you auto sort the claimable rewards from high to low--- because it makes re-staking easier to find the coins that breached a cutoff threshold (dollar amount) to be re-staked.

Not 100% confirmed yet but we are thinking of sorting claimable rewards from high to low (in fiat value) in Keplr extension 2.0. It will be released sometime next month, stay tuned for the updates!
